    • 350 g (12 oz) strong plain flour

    • 1 teaspoon ground mixed spices

    • 1 teaspoon ground cinnamon

    • 1 teaspoon grated nutmeg

    • 1 packet of easy mix yeast

    • 25g (1oz) caster sugar

    • 75g (3oz) currants

    • 25 g (1 oz) mixed bark, chopped

    • The zest of a finely grated lemon

    • 75 g (3 oz) vegan margarine, melted

    • 175 ml (about 6 floz) soy milk, warmed

    • For crosses:

    • 50g (2oz) plain flour

    • 25g vegan margarine

    • For the icing:

    • 25g (1oz) sugar

    • In a large bowl, combine the flour, spices, baking powder, sugar, currants, lemon zest and zest mixture. Make a well in the center and add the melted margarine and a little hot milk. Mix until a soft dough forms, adding more milk if necessary.

    • Place the dough on a floured work surface and knead for about 10 minutes. Place in an oiled bowl, cover with cling film and leave in a warm place until doubled in size, which will take about 1-2 hours.

    • Meanwhile to make the crosses, rub the margarine into the flour and add enough water to bind. Roll out the dough quite thinly then cut it into thin strips.

    • Once the dough has doubled in size, roll it out and knead it for 5 minutes. Divide into 12 pieces, roll each piece into a ball and leave on a greased baking sheet. Let rise again for about 30 minutes.

    • To make the glaze, heat the sugar in a saucepan with 2 tablespoons of water, until the sugar dissolves. Let cool. Glaze each loaf and top with pastry crosses.

    • Bake at 180°C/350°F/Gas 4 for about 20 minutes or until golden brown.
