  • Light as a cloudy vanilla sponge, a rich alcohol-based chocolate filling and a cheat marshmallow frosting. This vanilla log ticks all your festive boxes.

    You can use whatever liqueur you like for the chocolate filling, but we think amaretto, rum, or brandy work especially well this time of year. This twist on a classic log recipe is cleverly inverted so that it’s snow-white on the outside and richly chocolaty in the middle. To make this birthday cake, you will need about 30 minutes to prepare it and an additional 15 minutes to let it bake.

    Ingredients

    • To make this log:

    • For the sponge:

    • 3 medium eggs

    • 100g caster sugar

    • 55g plain flour

    • 55g ground almonds

    • ½ teaspoon of baking powder

    • For the filling:

    • 150 ml double cream

    • 200g of melted chocolate

    • 2 tablespoons of liqueur (choose your favorite)

    • 2tsp vanilla paste

    • For the icing:

    • 125 g of plush marshmallow

    • 150 g of whole cream cheese

    • Cocoa Powder

    Method

    • Heat the oven to 180 ° C / thermostat 4. Butter and line a 20x30cm snap mold.

    • In a large bowl, whisk the eggs and sugar with an electric hand whisk for 3 to 4 minutes, until thick and pale – this should leave a trail when the beaters are removed from the mixture. Sift the flour, almonds and baking powder, then fold in gently. Pour into the mold, smoothing the surface. Bake for 12-15 minutes, until golden brown and slightly springy to the touch. Cover with a tea towel and let cool.

    • Whip the cream until soft peaks, add the melted chocolate, alcohol and 1 teaspoon of vanilla and whisk to combine.

    • In another bowl, whisk together the Marshmallow Fluff, cream cheese and remaining vanilla.

    • Unmold the cake on a large sheet of baking paper, sprinkled with icing sugar, peel off the baking paper. Spread the chocolate cream, leaving a margin of 3 cm along one of the short edges, then roll gently from the opposite edge using the baking paper. Transfer to a serving plate. Drizzle with cream cheese frosting, smooth with a knife and then use to create a bark effect on the surface. Sprinkle with a little cocoa powder and serve, or refrigerate for up to 24 hours, loosely.
