  • Soft marshmallow down, squidgy mini marshmallows, crunchy nuts and chocolate chips, this is an easy recipe that will delight chocolate lovers. The rocky log is the perfect festive dessert to serve in place of a traditional Christmas log.

    The beauty of this chocolate log is you can mix and match the filling to suit any pallet. Replace the almonds with chopped chestnuts and the chocolate chips with candies or crushed cookies – however you like. By all means, enlist younger family members to help you out, but you’ll need a steady adult hand to roll the roll.


    • 6 large eggs (separated)

    • 150g caster sugar

    • 50g cocoa powder

    • 1 tsp of vanilla extract

    • 1 jar of Marshmallow Fluff

    • 100g of white chocolate chips

    • 100g of milk chocolate chips

    • 100g dark chocolate

    • 150g of mini marshmallows

    • 100g flaked almonds


    • Preheat the oven to 180 ° C / thermostat 4/350 ° F. Line a shallow baking sheet with greaseproof paper.

    • Beat the egg whites with a few spoonfuls of sugar until they form stiff peaks

    • In a separate bowl, whisk the egg yolks, vanilla and remaining sugar until pale and thick.

    • Sift the cocoa into the egg yolk mixture and mix. Add a large spoonful of the egg white mixture and mix well to loosen.

    • Gently fold in the remaining egg white, taking care to get as little air out of the mixture as possible.

    • Spread evenly with a spatula on the baking sheet and bake in preheated oven for 20 minutes, until just cooked through.

    • Let cool a bit before unmolding onto another sheet of baking paper. Carefully remove the baked paper. Cover with a clean tea towel and let cool.

    • While the sponge cake is cooling, gently melt the dark chocolate in the microwave in bursts of 20 seconds until smooth to form the rocky road. On a baking sheet lined with baking paper, coarsely drizzle half of the melted chocolate and add the marshmallows, almonds and chocolate chips before drizzling with the remaining chocolate. Let cool.

    • Uncover the sponge and spread abundantly with the Marshmallow Fluff and chunks of the chilled rocky road.

    • Using baking paper, gently roll everything to create a roll shape.

    • Garnish with the rest of the rocky path and sprinkle with icing sugar.
