Made with yogurt and olive oil, it’s incredibly light and fluffy. It is drenched in an aromatic lemon syrup infused with thyme which, when cooled, forms a delicate and crispy sweet shell. Served with an abundance of berries, it makes a wonderful centerpiece for an afternoon tea in the garden. The aroma of fresh thyme will always bring back indelible memories of Highgrove Gardens and the joy of being able to pick fresh herbs moments before they are needed for a cake.

Rhubarb and white chocolate tartlets
In this recipe, thin golden and crispy filo pastry is filled with a creamy white chocolate and vanilla mousse and topped with rhubarb tart – a heavenly combination of crunch, creaminess and tartness. Harry and Meghan served rhubarb tarts at their wedding, which were a bit reminiscent of Harry’s childhood and the wonderful rhubarb grown in Highgrove.

Strawberry cake
There is no cake more royal. It was originally made for Queen Victoria, during her incredible 63 year reign the tradition of afternoon tea began to evolve. And during Queen Elizabeth II’s 70-year reign, the tradition of afternoon tea grew in popularity. Queen Victoria reportedly had her cake with raspberry jam and topped with a sprinkle of granulated sugar. I filled this one with strawberry jam and garnished it with berries and some fresh rose petals, then added some mini party buntings.
