Combine 500 grams of plain flour and 140 grams of icing sugar in a bowl. To this, add 250 grams of unsalted butter and 4 egg yolks. Make two balls with this dough then flatten them with a rolling pin. Cover with cling film and refrigerate for half an hour.
To prepare the pie filling, beat together 5 eggs, 140 grams of caster sugar, 150 ml of heavy cream and the juice of 2 lemons in a bowl. Sift this mixture then add 2 tablespoons of lemon zest.
Roll out the puff pastry and flatten it. Then place it on a tart mold and place in the fridge for half an hour. Line the pie with foil and fill it with rice. Bake the pie at 160 degrees Celsius for 25 minutes.
Once done, pour the lemon mixture into the pie and bake for another 30 minutes. Carefully remove it from the pie pan and serve.
