    These zesty orange muffins are flavored with a fresh orange zest. To add even more orange flavor, replace some of the milk with freshly squeezed orange juice. Skim milk is used to make these orange muffins and keep the fat content low. This recipe makes 12 muffins in just 30 minutes.


    • 240 ml of skimmed milk

    • 1 beaten egg

    • ½ teaspoon of salt

    • 1 tablespoon of baking powder

    • 3 teaspoons of granulated sugar substitute

    • 250 g all-purpose flour, sifted

    • 60 g of melted margarine

    • 2 teaspoons of finely grated orange zest.


    • Preheat oven to 425 ° F / 220 ° C / thermostat 7. Spray muffin pan with nonstick coating agent.

    • Sift the dry ingredients into a medium bowl.

    • In another bowl, combine the egg with the milk, margarine and orange zest. Beat with fork or whisk to combine well.

    • Make a well in the center of the dry ingredients. Pour in the liquid ingredients; stir quickly until dry ingredients are just moistened and mixture is still slightly crumbly.

    • Divide the batter into muffin cups, each two-thirds full.

    • Bake for 15 to 20 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Loosen edges of muffins. Let stand 1 or 2 minutes. Put on cooling racks.
