Hand torn buratta
240 g of buratta
10 g miso paste
100 g green tomato
8 g green chilli
10 g of coriander
20 cl of white wine vinegar
20 g of jaggery
4 g of ginger
2 g of salt
2 g olive oil
2 g black pepper
50 g arugula leaves

Cover with a lid and cook over medium heat for 20-25 minutes to make green tomato chunda.

Lightly toast the ciabatta with curry and apply olive oil on it.

Cut the buratta in half, season with salt and pepper and serve with chunda tomato and garnish with olive oil and serve cold.

Edamame and wasabi hummus
300 g edamame beans
2 g of wasabi
10 g tahina
6 ml lemon juice
2 g jeera
6 ml olive oil
20 g red radish
4 g of garlic
40 g of khakra
20 g of flax seeds

In a blender, combine the edamame beans, garlic, tahina paste, jeera powder, wasabi, lemon juice and olive oil.

Combine all the ingredients to make a smooth paste.

Serve the hummus with khakra and pickled radishes.

Garnish with flax seeds and olive oil.
