Ingredients
1 tablespoon olive oil
1 onion, diced
2 garlic cloves, crushed
1 tablespoon peanut butter
2 tablespoons of soy sauce
2 cups of green vegetables (such as beans, broccoli
or bok choy)

1/2 cup cilantro leaves, plus extra for garnish
3 cups cooked rice

Method

  1. In a large pot heat the oil. Add the onion and garlic, cooking 2 or 3 minutes to soften them.
  2. Add the peanut butter, soy sauce and 2 tablespoons of water to the pot with the onion and garlic, and mix.
  3. Add vegetables, cook until just cooked.
  4. Stir in the chicken and most of the cilantro.
  5. Serve hot over rice with a few extra cilantro leaves on top.
