  • Delicate sponge bars topped with gooey marshmallows and a meringue crunch.

These cookie bars with cake mix are a great on-the-go snack, so different from the classics chocolate chip cookies, but just as delicious. They have three layers of beauty that you cook at the same time. On the base is the cake mix, then in the middle is a mixture of marshmallow and chocolate chips. Finally, you top it with a layer of golden sugar meringue that brings it all together. This recipe makes about 8 good-sized bars that are a brilliant addition to kids’ lunchboxes or as a mid-afternoon snack. You can replace the chocolate chips in the middle layer with raisins or dried cranberries if you prefer.
