  • Christmas cookies are a very quick and easy bake that’s also fun to make with the kids.

    Festive, mouth-watering and full of flavor, our Christmas cookie recipe uses seasonal red and green M&Ms to help create a delicious chocolate treat. They take just 25 minutes to prepare and bake, using store cupboard essentials like flour, sugar, and a dash of golden syrup and vanilla extract for a sumptuously sweet batter. Kid-friendly, time-tested baking, why not let them get creative on the cookies with icing pens and let them draw on festive stars. This will make them perfect for hanging on the tree or giving grandparents as a homemade food gift.

    Ingredients

    • 125g unsalted butter, softened

    • 100g light brown sugar

    • Pinch of salt

    • 2 tablespoons golden syrup

    • 1 tsp vanilla extract

    • 160g self-rising flour

    • 100g red M&M’s

    • 100g green M&M’s

    Method

    • To prepare this cookie recipe, preheat the oven to 180°C/350°F/Mark 4 and line a baking sheet with parchment paper.

    • Beat butter and sugar with an electric mixer until light and creamy. Beat the golden syrup into the butter and sugar with the vanilla extract. Sift flour and salt until just combined.

    • Lightly crush the M&Ms with the bottom of a mug or the end of a rolling pin. Stir the broken M&Ms into the cookie dough mixture with a large metal spoon, until just combined.

    • Gather the cookie dough into a ball and place it on a floured work surface. Roll out the cookie dough to about 1cm thick and cut the cookies into circles using a medium sized cookie cutter. If you plan to hang your cookies on the tree, poke a small hole 1cm from the top of the cookie using your index finger.

    • Place the cookies on the lined baking sheet, leaving plenty of room for them to spread out while baking.

    • Bake for 12 minutes or until just golden.

    • Let the chocolate chip cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

    • Once completely cooled, you can pass a ribbon through the hole in each cookie and tie them to your tree.

    Tip for making Christmas cookies:

    You can always swap your M&Ms for red and green smarties if they’re more to your liking.
